Wild Food Fest – flowers

wild food event As the summer hopefully starts we will be looking to the flowers. How can flowers be added in to salads for taste and visual effectiveness, what soothing teas can be made from natures flora and much more. Expect to try a whole range of teas, some fresh that we will forage on the day and others from my large array of dried wild teas – we can make our own blends and try each others concoctions. We can also try some of the elder flower champagne we will have brewed in the previous session.

we can make some rose petal yoghurt which is unbelievably delicious and may even put our hands to rose petal Turkish delights!

We will meet at Styperson Quarry and take a walk down to the Middle Wood Way where most of our foraging will take place, returning back to the forest to cook up something delicious in our forest kitchen

Wild teas, tisanes and tonics

Wild teasJoin us to learn more about wild and foraged ingredients and how they can be utilised within various beverages. During our fun filled day we will ID various wild plants, we will discuss how they can be used within various drinks and will taste a range of drinks. On this course we will also cover how to brew your own delicious wild fermented concoctions. We aim to get everyone who joins us for a wild drinks session to try something new and take something home to share with whoever they wish. A truly inspirational and grounding experience.

Expect to try, not exclusively, elderflower champagne, roasted dandelion root coffee, various herbal teas, beech leaf noyai liquor, blackberry whiskey and others. Expect to take home – one bottle of wild brewed wine and beer. We’ll give you the skill and knowledge to continue wild brewery at your own leisure. This course is great for anyone interested in sustainability, wild food, utilising what nature’s given us, brewing or just drinking the focus is on all drinks incl non-alcohol. This course can also be re-formatted for wonderful and adventurous adult parties.

Wild Food Fest – teggs nose bilberry pick

Bilberry painted in bilberry juiceThis month Schola Foris’ Wild food fest will be teaming up with Wacky Woods and The Cheshire East Rangers to bring a new spin on this years bilberry pick.

The pick will take place up at Teggs Nose country Park – one of the best spots around for picking this delicious fruit. Expect to make and try bilberry jam, bilberry fruit leather, bilberry painting and depending on the fruitfulness of the coming season we may also try bilberry soup (a strange concept but just wait until you try it!)

We will meet on site at 10-10.15 – have a short talk about the site and the bilberry, we may even delve in to some mythology of the bilberry followed by a lovely stroll to the site where we will show you how to identify and harvest, at which point you’re free to collect to your hearts desire. Meeting back at the  visitors centre around 11-12 to cook up and try some delicious bilberry creations!

Wild Food Fest – berries

japanese rose hipsWe should have passed the summers sun, all the plants will have stored as much of that energy as possible and will now be releasing it in the form of beautiful and delicious fruits. We will identify and collect a whole range of fruit from Elder berries to Rose hips, wild strawberries and maybe the odd blackberry if we’re lucky. With these we will make a range of edibles to excite your taste buds, expect to try Jams, jellies, syrups, fruit leathers and soups.

This is also the time of year where some plants put that collected energy in to their roots to be stored so we will look in to the potential of utilising root systems, specifically looking at making our afternoon coffees from roasted dandelion roots as well as the opportunity to taste my very own roasted dandelion root stout.

Wild Fungi Forage

A Mushroom Hunt

This Fungi Forage will be led by expert mushroom forager Jesper Launder, we will meet at an undisclosed site in goyt valley, in between Cheshire and Derbyshire (one of the car parks, we will let you know by email closer to the time), where there is an amazing array of wild fungi to search for, discover, uncover and learn about. As well as learning about mushrooms we will be teaching you varying techniques for identifying mushrooms safely, how to pick and process mushrooms for medicine, art and food. At the end of this session we will cook up something special and we can all share the days collection and fruits through our taste buds. This may be a risotto, some peculiar mushroom sweets or mushroom tea – or all of them haha!!

In-Depth Paper Making

Paper SamplesSession will run 10-15:00 on both days,

During this in-depth session we will learn the history of paper making from collection of material through processing and to making and using our own papers. We will look in detail at the equipment used to make paper and will all design and make our own deckle and moulds, which you can take home with you. We will look at the potential for using wild and natural dyes to colour your paper pulps and papers. As well as techniques used historically, in modern production and from the wild for sizing paper, or making paper suitable for watercolour works. Giving you all the in-depth knowledge and tools to make your own unique papers whenever you feel inspired to do so.

Wild Food Fest – Spring Green Wontons
May 24 @ 10:00 am – 3:00 pm

In this session we will look at the bounty that spring has to offer us, as we come out of winter we need to revitalize our bodies and take on some amazing tasting wild edibles. We hope to find: hog weed, various blossoms, nettles, ramsons, cows parsley and much more.

On this session we will make up some fresh wild pesto, cook spring green wontons, eat some Japanese knotweed crumble, taste nettle wine and make some dandelion flower marmalade to take home with us!

Wild Food Fest – wild pakoras
Jul 26 @ 10:00 am – 3:00 pm

Through this session we will be looking at the development of the spring greens as well as the transition that plants take before going to fruit, there will be lots of blossoms to investigate. We will cook up some burdock root pakoras, hogweed and nettle curry paste with hogweed seed seasoning, elder flower fritters, washing it all down with some sparkling elderflower wine. We will make elderflower cordial for everyone to take home and drink to their hearts content.

Wild Food Fest – Wild nut and feta parcels

As summer draws to an end everything starts to store its energy to last throughout the winter and we will be doing the same looking to preserve some amazing flavours, we will be looking to the trees and shrubs for berries, nuts and other plants for their roots. Expect to make wild nut and green feta parcels, a late summer salad with wild berry vinaigrette, wild berry Ice cream and rose hip and hawthorn berry ketchup to take home and spread on all your ketchup requiring foods (everything!!)

Wild Food Fest – fungi forage

This wild mushroom hunt will be led by Jesper Launder with various tasters provided by our own James Wood, expect to find over 40 different mushrooms and over 15 edibles. We will look through mushroom keys and the basics to identifying mushrooms correctly, we will then take a stroll where it’s your challenge to find as many different species as possible, we can identify them together, get approval from jesper and take them back to cook up something special with them!jespers mushrooms
